Rome--trouble finding open restaurants open last week of August

Hi all,
My husband and I are heading to Rome in a little over a week, and we are having trouble nailing down enough recommended restaurants that are open that week (last week of August/first week of September). I was wondering if anyone has any recommendations to fill in the gaps! If you know a restaurant is open that week, that would be super-helpful, but even if you don’t know for sure, please recommend a name, and I’ll take it from there! Here’s what we have so far:

Aug. 27, dinner, arrival: Cul de Sac wine bar (confirmed open)

Aug. 28, lunch—empty
Dinner—Ai Marmi (open? Not sure if they’re open in August)

Aug. 29, lunch—Osteria La Gensola (confirmed)
Dinner—Antico Arco (confirmed)

Aug. 30, lunch-- Al Ragno d’Oro da Marco e Fabio (we need something close to the Vatican—not sure if they are open?)

Aug. 31, lunch—Enoteca Corsi (open? Not sure)
Dinner—Roscioli (they have confirmed they are open, but for some reason they won’t reply when I ask for a reservation!)

Sept. 1, lunch—00100 (open?)
Dinner—L’arcangelo (I made a reservation via their web form, but they have not yet confirmed)

Here are some places that I have confirmed will not be open during our visit:
Taverna Fior Imperiali
La Campana
Checchino Dal 1887

At this point, we’re looking for options on the cheaper or modest side, since we view Antico Arco and Roscioli as splurge meals. We’d rather spend the remaining opportunities with mid-priced meals or cheaper options. We’re staying near in the Navona neighborhood, and appreciate conveniently-located options but would also be willing to trek a bit for meals that are worth it. We will be relying on public transit and our legs, which we like to use walking! : )

We also prefer for the most part to stick with traditional Roman cuisine for our remaining open spots. Appreciate any help, advice or insight anyone can offer! Thanks!
