I caught part of a Lydia Bastianich cooking show today on PBS. She was making the squash with balsamic. I didn't see what she did with the vinegar - she reduced it with some herbs - bay leaf and something else....and honey? Missed that part.
All the recipes I've found on Google just say to sprinkle balsamic over the squash after it has roasted. Anybody catch the rest or have a cookbook containing her recipe? Thnx in advance.
While Googling, however, I did find a recipe I'm making tomorrow! It's a Jamie Oliver salad of warm roasted squash pieces, prosciutto, greens and shaved pecorino. Sounded fantastic. Will let you know how it turns out.
