Roasted Pork Shoulder Tastes Like Soap - Help!

i realize this is really off the wall, but i am going crazy. i've been making a roasted pork shoulder in the exact same manner for years and it is absolutely delicious. here's my method. chop a bunch of flat leaf parsley, garlic and fresh rosemary. take the shoulder out of the net and rub it in along with some salt, pepper and olive oil. somehow, i manage to manipulate back into the net and brown it in my LC pan. when it's sufficiently browned, i put in about a cup of white wine and put in oven covered at 325 for 3-3-1/2 hours - until it's falling apart tender. i usually serve it with broc. rabe and asiago cheese and it usually tastes great, however the past two times i made it, parts of it tasted like soap. i am going out of my mind trying to figure out what is causing this! any ideas? thanks from a crazed cook in new jersey.
