Roast vegetables .. the night before

Tomorrow we are eating at noon and traveling ~3 hours beforehand. I have two 9x13 pans of vegetables to roast... would it work to roast them tonight, or do I need to wake up extra early and roast tomorrow?

Apologies if this is a really basic question, I never have tried the night before, and I am worried they won't be crisp and instead will be soggy.
