I have an oatmeal bread recipe from James Beard Bread ( Maryettas oatmeal Bread) which directs the bread to rise uncovered both times, unlike any other recipe in the book. Beard , annoyingly, does not explain why. I have made this bread many times, following the direction, so I know it works. It is in fact my favorite oatmeal bread with either white or whole wheat flour.
But I don't understand the reason for the uncovered rise, and I am curious as to your insights. Thanks in advance.
