how can i make self-rising flour (for fish fry "breading")?

question: made some amazing fish tacos last night with some friends. we used pillsbury brand self-rising flour for to dredge and fry our fish nuggets in, and it made for a beautiful golden fluffy crust when we fried them. but i'm more of a natural guy and this pillsbury flour has some chemicals in it, one of which was baking soda. i think some baking powder as well. so i want to know how i can replicate this kind of finished product using organic flours myself. hell, they may even sell nice self-rising flours at whole foods, not sure. but can i just add some baking soda and/or powder to more natural flour? what ratios? any advice would be much appreciated --- thanks!!!
