Ripe jackfruit

I brought home a whole, perfectly ripe jackfruit to enjoy on 4th of July. Due to a series of events, we never cut the fruit and shared it with guests. Now I have a whole jackfruit for 3 of us. I could share some of it, but still not enough to make a dent in the amount we have.

Looking online for recipe ideas beyond smoothies and ice cream took me into quite a rabbit hole of jackfruit-based fritters, soups, and pastes .. and you can even eat the seeds!

Have any of you tried these or other ripe-jackfruit dishes? Will they be worth the trouble? I like some of the ideas here because I think I could freeze the fruit and still use it later. For some reason I suspect that using frozen jackfruit for ice cream or smoothies will not be especially appealing, but cooking it later might work well. Has anyone cooked with the seeds? Should I bother?
