We hadn't dined at bespoke/Sabor for a few months, and our return last night, with friends from out of town, was nothing less than wonderful. We dined on the second floor (primarily for Sabor afficionados) and were surprised to receive both the Sabor and bespoke menus, and as it turned out, while most of the dishes served were off the latino menu, one of our friends had an entree from the bespoke selection. The verdict - everything was absolutely wonderful. While there were a few long waits between courses (the place was absolutely packed), the service was very professional and accommodating. I like it when the waitperson recites the specials without reading from the back of a kitchen check and takes all of the orders by recitation and gets absolutely everything correct! It is obvious that Franco and Suzette (owners) take great pains in training their waitstaff and it really does add to the experience.
Our friends were absolutely blown away by both the presentation and the food itself. Among dishes ordered were:
Apps: tuna tartare, shrimp in coconut, special of 2 ceviches, salad
Dinners: pato (duck), corvina, sable (off the bespoke menu)
For desert, we just ordered a sampler of sorbets, all of which were delicious.
This is not inexpensive dining, but for a terrific experience, both in terms of ambience and the quality of the food, the Camachos have been able to successfully transplant the success of Roomba to their newer venue. It is clear to us that bespoke/Sabor remains among the best places to eat in New Haven.
