Restaurant Recommendations Please

We love Luke's and Cochon in New Orelans and Au Pied De Cochon in Montreal - craving for things like the Mangalitsa pork rilletes and the Boudin Noir at Luke's, the Boucherie plate at Cochon and PDC's Melting Pot at Au Pied De Cochon. Would love to try similar (pork-centric) restaurants in New York City or the outer boroughs. We are visiting NYC a couple of weeks from now, and so far know that we going to Balthazar and Pastis, and perhaps Le Sirene.
