Restaurant hopping in SF--tips, and has anyone done it?

I wonder, with all this discussion about where to go and what to eat on limited time, has anyone ever just gone to 5 restaurants in one night??

I envision each diner (no more than two or three in a party) armed with a MUNI pass (or car), sharing a signature dish at each restaurant. Obviously it would be hard to decide which is THE dish at most restaurants, but humor me. I often enjoy appetizers and dessert more than main courses, and was wondering if that's acceptable.

The idea of having Kumamoto Oysters at Hog Island, petite sale at Jeanty, Cioppino at Tadich, two or three small plates at Piperade, throwing in one or two other restaurants in the area with exceptional appetizers, and then ending with coffee and dessert in North Beach is incredibly appealing to me.

The burning question is whether restaurants would find me a pain in the ass for only ordering an appetizer, then leaving after 20 minutes.
