i just came across a very interesting food business writer for the financial times, nick lander. i like his behind-the-scenes information, finding out the who is who, and how-things-are-done in the food industry to be quite fascinating.

topics: chefs, cookery, wine, management, produce, atmosphere, the business, and books.

i just read one article about creating wine lists, another about the chef albert roux smuggling foie gras, and another about the james beard awards....or noise, and good service, and lighting, and how to build a nobu, and on and on......
