Reseason De Buyer Carbon Steel pan completely or is it ok?

superr | May 25, 201506:23 PM     46

Hi everybody. I bought a De Buyer Carbon Steel skillet a few months back and seasoned it up nicely (or so I thought...) with about 10 coats of flax seed oil. The result looked like a well seasoned pan, uniform in color as what you can see in the sides of the picture I attached.

I cooked a few batches of bacon with no issues and great results but when I tried cooking a piece of marinated pork loin, I got really bad sticking with some of the seasoning coming off to the bottom layer. I got pretty discouraged and shelved the pan for a while.

I revisited this pan today and noticed that there were some orange rust spots which I was able to easily scrub off with medium fine steel wool.

I reseasoned the pan 3 times with canola oil but I noticed that a little bit of seasoning from the sides started coming off. Is this normal or should I just try to scrub the whole thing down and reseason completely?

Thanks!
