Will be making a quinoa pilaf tomorrow and I wanted to do some pre-cooking.
Roasted shiitakes the same way I do regular white button mushrooms.
I should have cut the time and/or temperature down, because now I have a bunch of overcooked shiitakes, not burned but too dried out.
Is there anything I can do to salvage?
I was thinking of either:
a) chopping them up and soaking them in chicken broth - since I'm going to use broth for the liquid for the quinoa
b) grinding them to a powder, then putting THAT in the chicken broth
Will either of those work? Or is there something else I could do? (other than tossing them out and starting again)
