I hope to drive from Atlanta and do some swamp paddling and general exploring in the Atchafalaya area - a part of the country I am not at all familiar with. This will likely be part of an extended trip in which food will figure prominently - involving Kansas City for BBQ and San Antonio and environs for Tex-Mex (got some great advice on the TX board). Anyway, I've been to NOLA a few times and have always enjoyed the cuisine (not at every restaurant, but in general), but wanted to have a more cajun experience this time (although I will still want to have at least a few white table cloth high-end restaurant meals). Anyway, I am looking for general advice (e.g., are any towns particularly good, or not, for a food enthusiast with a specific interest in regional specialities - like Lafayette vs Baton Rouge, etc.)?
