A Dictionary of Japanese Food: Ingredients and Culture, by Richard Hosking (Tuttle). Remarkable for its detailed listing of every possible ingredient, with each item written out in the Japanese alphabets (one using Chinese characters). Thorough and penetrating, it also contains a bibliography of few but essential works.
