Regional specialties

Like everyone else on here I am planning a trip to Milan, Florence, Venice, and Rome this summer. While it seems like every thread on here is about which restaurants to go to, most do not make mention of which dishes to order. Are there any regional specialties in these cities that shouldn't be missed? Or can I find good regional Italian food in pretty much any city? I'm looking for stuff like "Rome is best known for their pizza so you should make sure to eat a lot of it when you're there".

I will be the first to admit that I know very little about Italian cuisine, espeically regarding northern vs. southern so any tips would be much appreciated.
