don't-miss regional eats in SF

I'm a New Yorker coming to SF for the first time, for five days in July. Will stay with a friend on the north side of the city (Golden Gate St.). Looking for a nice sampler of don't-miss, preferably unique-to-SF kinds of eateries. Prefer nearby but a short drive/walk/busride is also ok.

Would like to try stuff that is generally acclaimed and quite different from what I might find in NYC.

Looking mostly for absurdly cheap, fairly cheap and midprice places (a full meal for $25, or much less; streetfood is cool, too). And maybe one or two places for a minor splurge. Would like some places that are not necessarily touristy (unless the food is spectacular) but that are generally well-regarded on these boards.

Curious about cuisine that's indigenous to or popular in the area: California cuisine; seafood; Cal-Mex [burritos, perhaps?]; regional Mexican; odd local variants on pizza; various Asian [Thai, Japanese, Laotian; Cambodian; unusual regional Chinese]; Ethiopian; etc. Exceptional and unusual Greek, Italian and Middle Eastern suggestions also welcomed.
