hello . . . I was thinking about this in the kitchen myth's thread and now I'm curious . . what is the best way to refrigerate, and why? my folks insist on cooling the food down to room temp. and then putting it in the fridge to avoid spoilage . . . and similarly, when packing a leftovers lunch, say, don't put warm food w/ cold food into the fridge, or next to one another in the container, also to avoid spoilage? does anyone have any idea why? or why not?
