So the boyfriend and I are baking red velvet cake for my upcoming birthday. We've made a couple test cakes so far--Cake #1 using the recipe below. (The recipe called for just 4 oz of beet juice, but I threw in an entire can's worth--about 6 oz.)
But the cake wasn't red--just a brownish color, almost like a spice cake. I thought it looked nice, but it's definitely not red.
Just what color could I expect using the beet method? Has anyone made them sans food coloring and gotten one actually reddish?
We subsequently did a different recipe using just 1 oz. of coloring and no beets, and of course that created the insanely red color that I've seen before--I don't expect beets to do that.
