Red Sauce *Pizza*

We are regular's at the Red Sauce in Hingham. We go most Friday nights because it is family friendly with food that is much better than the other "family" places. This is not a place I would take out of town guests (unless they also had little kids) but my son loves the scallop apps, the meatballs and the mini pizza's so we have become regulars. I usually lean toward special ordering something light since much of the mneu is pretty heavy but the risotto is also very good.

Well- I have not had one of their regular menu pizzas in a long, long time. On Friday night we ordered the one with spicy sausage. I have to tell you it was sublime! It rivaled anything I have had from Santarpios or Regina's recently. First of all the crust was amazing-thin, tender yet chewy, nicely browned on the edges with a perfectly crisp bottom. Plus an abundance of those bug bubbles around the edges that you just don't find on pizza anymore. The sauce was perfect- tart and very fresh tasting, much like the dipping sauce they offer with the bread. The cheese was not overloaded (too much cheese is a pet peeve of mine) so you could really taste the sauce. The sausage was crumbled, not sliced with just the right amount of heat/spice and cooked just enough so it didn't have the really tough and over cooked texture I find at both Regina’s and santarpios. It was so good I almost don’t want to jinx it by ordering it again, afraid that I will disappointed. Anyone else try their pizzas? Was this a fluke or the real deal?
