Recreating Mashed Potatoes with Truffle and Burrata

We recently had the most memorable dish in Venice Italy at Trattoria Antiche Carampane. It was described as "Grilled Octopus with soft potatoes cream white truffle flavored, burrata, crispy bread". I only have a photo of the dish before we dug in, but the burrata was at the bottom of the dish and the mashed potatoes were on top, then the octopus. When we asked the server, she said that they foamed the mashed potatoes on top.

I am going to recreate a modified version of this at home tomorrow for guests on New Years Eve with beef cheeks instead of octopus. I'm not going to foam the potatoes. I brought some truffle-infused oil back from Italy.

My question is this: If the order of placing items in the bowl is burrata, then mashed potatoes, then beef, at which point would you incorporate the truffle oil? Drizzle on the burrata? Mash into the potatoes? Drizzle on top of the potatoes?
