Need Help Recreating This Particular Mac n Cheese

Chowhounds, I need your help recreating my childhood nanny's macaroni and cheese. I'm beyond the craving stage and rapidly moving on to obsession...

What I remember about it most vividly was that it didn't appear to have a white flour and water base--it was extremely stiff, almost entirely pasta and cheese. And there were many types of cheeses in it: Cheddar, definitely. And also a sort of white curdy cheese. Maybe farmer's cheese, or ricotta. Pretty sure she just gave the cooked pasta and cheeses a quick stir in a deep casserole dish before popping it into the oven, because the cheeses were not one homogenous blend of cheesy sauce. Is this a particular STYLE of mac and cheese (soul food? deep south?), and if so, what style is it? Any advice would be so appreciated...
