Recommendations for a Long Island Butcher?

After striking out too many times at the Grocery store meat counters I've begun searching for a real Butcher. Any recommendations for a good butcher on Long Island, preferably Western Nassau? Someone will say "Got it", or "I can order it" when I ask for things like Pork Rind, Slab Bacon, Caul Fat, or Veal bones instead of looking at me like I have two heads.
