Recommendations for a dinner

My wife is having 10 or so of her good friends over for dinner and I'm the absentee chef (meaning I need to have it mostly completed before they arrive around 7). I am curing a couple of salmon sides (one for me and one for them) for an app (along with the normal egg, red onion, capers etc.). I have been struggling with the main for a week. Last year I did coq au vin. It was well received, though I suspect a little heavy for this time of year.

I'm looking for something relatively light, though preferably a one dish (or one + salad) type of meal. No red meat for this crowd. Pork is a possibility. Chicken even better but it's boring to me (maybe I've eaten too much). Maybe fish? but I need to be budget concious. I did see a good recipe for stuffed chicken breasts on America's Test Kitchen...that could do it, but it still seems a little boring.

I do want something different or I want to do something well-known, but do it well and/or with a twist. Thanks in advance...
