In Italian, this recipe site has wonderful local dishes, even from small mountain towns. One dish, pallotte con sugo, is a wonderful rarity: softened stale bread mixed with local cheeses, formed into balls, fried, then cooked briefly in a fresh sauce of chopped tomatoes. (Casc' e pallott' in Roccascalegna dialect). Most English language cookbooks are unaware of these treasures.
