My boyfriend and I recently went to dinner at a charming restaurant here in Baltimore, MD called The Chameleon Cafe. He ordered the lamb, which came with an earth-shattering Solferino sauce, described by our waiter as a savory red sauce with veal stock. It tasted to me like it had red wine in it as well, but after spending hours poring through my cookbooks and scouring the internet, I only came up with one recipe. It sounds good but it doesn't bear a resemblance to the sauce we had, calling for tomato juice, parsley, dill, cress, tarragon, lemon juice, butter, and shallots. I'd love an alternate version so that I could try to duplicate it at home.
