I had a vegetarian Kibbie type dish today at the kosher dairy lunch counter at my school. The kibbie contained a generous helping of sauteed mushrooms and onions which were quite tasty. The potato part on the outside was also well-seasoned--almost had a meaty taste. It was light brown so maybe it contained some kind of gravy or esatz meat flavor. Whatever it was, it was tasty--even cold. I would love a recipe for something similar. The lunch counter manager couldn't help me--said he buys them. My guess is that they are a Bhukarian or some other kind of Central Asian.
