I'm planning my dinner for my Dad's Birthday, conveniently held this week so I'm covering Mother's Day as well!
I want to make a main course that involves some type of seafood, probably seared scallops, served w/ corn broth. In fact, i made the broth (corn boiled in water and homemade chick stock) last week and froze. I need advice on what else should go on the plate, or just a similar recipe that I could look at to make me feel more comfortable that it's not going to be a mess. I want to add some veggies to the mix.
In my garden I have a few tiny yellow squash, their blossoms, baby swiss chard, baby lettuces, lots of herbs.
I'm planning a starter of wild mushroom tart & baby greens. We just got a Whole Foods in town, so I'm hot to use my new-found access to exotic 'shrooms. I have the pate brise in the freezer, but advise on making a nice mush. tart would also be appreciated.
Maybe some herb gougeres, too. These two items + the birthday cake to follow have seriously used up my butter allocation so I would like the main course to be very light. TIA!
