11⁄2 cups unbleached all purpose flour
1⁄2 cup cornstarch
1 cup sugar
1⁄4 cup cocoa powder
1 tsp baking powder
Pinch baking soda
3 large eggs plus one egg yolk
1 cup chopped semi-sweet chocolate
1 tsp vanilla
11⁄2 cups toasted chopped hazelnuts
Pre-heat oven to 375. Line large baking sheet with parchment paper.
Sift together flour, cornstarch, sugar, cocoa, baking powder, baking soda, and salt. Place flour mixture in an electric mixer bowl. Beat at low speed, adding the eggs one at a time. Add vanilla and chocolate.
Fold in chopped hazelnuts. Transfer mixture to a floured board. Shape dough (will be moist) into 2 logs and place them 4 inches apart on the baking sheet. Bake for 20 minutes or until firm. Remove from oven and set aside to cool at least 20 minutes. Reduce heat to 350.
Transfer logs to a cutting board and cut logs diagonally into 1⁄2 inch slices. Place slices on baking sheet and bake for 20 minutes longer. Transfer to a wire rack to cool. Makes about 2-21⁄2 dozen.
