Recipe for Cinnamon Crumblets Like the Ones at NJ Whole Foods?

Hi All:

My husband loves these things, but they're kind of pricey, especially when you consider that he inhales all 18 of them in about two days. These are a like a cross between a muffin and a cupcake. Yet, they're not that horrifically bad for you--canola oil, wheat flour, soy milk, etc... I'm wondering if anyone's either had these things or at least knows what i'm talking about. They're not made by WF, just sold there, and now that i'm at work, I can't check the box to see who makes them.
In any case, they have a bit of cinnamon crumb topping, that i can figure out--just butter, sugar, flour, and cinnamon.
But it's the cake/muffin I'm unsure about. Barring someone knowing exactly what i'm talking about, does anyone have a good recipe for either white cake that's lower in fat or else a white-whole wheat flour based sweet-ish muffin recipe? I guess I just need something fairly basic, to which i can add a lot of cinnamon. I'm fine on improvising a super whole wheat-bran muffin, but don't really know a great basic muffin recipe.
My other question, as I ramble on, is this: if i took a cake recipe and took out some sugar and subbed in white whole wheat, would i need to add more liquid or more anything else?
