I am about to launch a street food stall for the southern Indian delicacy-Dosa. Here in the UK we have quite a large amount of Crepe stalls using these cast iron, gas powered crepe griddles that cook 1 crepe at a time (often having 2 of them on the go at once).
I thought about using two of these but wondered how I'd cope with a rush of customers.
So, I've been looking into gas powered griddle pans-the kind you see burger vans using but there seems to be so many!
I'll be manually lifting it out of a van onto my stall and back again at the end of the day so weight is a small problem, also, there are quite a large number of materials to choose from-chrome, cast iron, stainless steel...
If anyone has any idea on catering griddle pans please chip in and give me any heads up-especially if you have dosa/Indian food experience!
