Almost raw, non-vegan recipes?

It has come to my attention that my husband and I look for the healthiest, best-priced vegetables that we can find...then end up cooking them "to death", making a meal that tastes delicious, but isn't the most nutrition for our money. I want to learn how to still be cooking (also, we are meat-eaters), but not cooking vegetables to a point of losing tons of nutrition. I want to incorporate them into every meal, and I cook almost every meal...but I don't know where to find these recipes. All that ends up coming up in a google search is the raw or vegan raw diet. This isn't exactly what i'm looking for. I really like how some Asian dishes are where you add the veggies right at the end. Any ideas? Is there a particular food culture that doesn't cook their veggies to death? I want to find a plethora of recipes in one place.
