Raw chicken in lbs to raw chicken cubed in cups?

magnoliasouth | Jan 17, 201602:22 PM     6

Everywhere I look all conversions are for pounds of raw chicken to cups of cooked chicken. This isn't helpful right now. Surely I'm not the only one that has looked for this?

A recipe calls for a pound of raw boneless breasts, cubed and I have bone-in leg quarters that I need to substitute, which I found on sale. What I then need to know how how many cups of meat a pound of raw boneless breasts would be.

Hopefully some of you genius chefs out there know. Thanks in advance!

ETA: I don't have a scale.
