Another use for ramps -- carbonara!

Last night we made a variation on spaghetti carbonara that turned out really delicious. We beat an egg in the bottom of a bowl w/ some salt, grated parmigiano reggiano, and fresh ground black pepper. While the pasta cooked, we slowly sauteed some ramps with bacon. Tossed the cooked pasta in with the egg & cheese mixture, mixed it around to make a sauce, then stirred in the hot ramps and bacon, topped with more fresh ground black pepper, and it was very good. (I had reserved some pasta water just in case, but I didn't need it.)
