Quintessential Chesapeake Bay-area Dishes

Hey folks - my husband and I are starting our third book on Maryland food. This one will step outside of Baltimore and concentrate on the Chesapeake Bay region. In particular, we'll look into how the Chesapeake has influenced the way we eat in Maryland. There will be history, info on conservation efforts, invasive species, and recipes. We'd like to include classic recipes and modernized versions of those recipes. Right now, we're still heavily in research mode and are still compiling a list of classic dishes.

My question for you is, what do you consider a classic Chesapeake Bay-region dish? I'm not talking fairly recent Baltimore classics, like coddies, Berger cookies, or pit beef, but dishes that make use of indigenous foodstuffs, or foods that were brought to this country by very early immigrants. We've already got stuffed ham, Smith Island cake, crab imperial, crab cakes, crab soups, Maryland fried chicken on the list. What else should we include? Any specific rockfish, bluefish, or oyster preparations? What about duck or game?
