There's the 'quick soak' technique for beans. Use dry beans, boil them for a few minutes, take them off the heat and let them soak for an hour or so. Then cook as you would cook overnight soaked beans.
Can this method be used for preparing falafel? (do the quick soak, skip the cooking part and grind/chop in the food processor and proceed as usual)
