quick, impressive, non-prefab meal

I am cooking dinner for my new sweetie and I after a few rounds of tennis tonight. I want to make something tasty that isn't prefab-ed. He has virtually no cooking "stuff" at his apartment, like spices, olive oil, etc so I'll have to buy it all. We will also be starving, since we'll have just run around for a few hours, so something under 30 minutes would be nice.

I'm thinking of doing the babbo bucatini all'amatriciana,

but I'm a bit afraid of burning the pancetta (I don't cook bacon. ever.).

any other ideas? the sweetie in question is fairly well-traveled, but has show no signs of extreme culinary adventure. I have a TJ's, a Whole foods and a normal supermarche at my disposal.
