I am right now in the midst of making the Cook's Illustrated cheesecake I've heard people on this forum rave about so much. I'm just using the recipe I saw on an old post here. Now, I've made cheesecake before and remember having to put it in a waterbath in the oven. Is that necessary for this Cook's Illustrated recipe?
I.E. Does it need to be put in a waterbath? Or do I just put the cheesecake pan in the oven?
Please advise soon as I have it all ready to go in the oven but now am not sure which way to do it.
