Hi everyone,

I decided to try to make a healthy quick bread that brought together some of my favorite flavors from different recipes. I referenced various recipes and modified them together to try to come up with something that would bake successfully, but I failed miserably. Since it doesn't have any eggs, we are still eating it, and we like the flavor. However, the inside of the bread is totally uncooked, and the crust is a bit like a pudding skin.

It didn't really rise so I'm assuming my batter was too heavy or wet, or both? I cooked it for over an hour at 350º on a 9x2 cake pan. I did open the oven after 30 minutes; since the pan was shallower than a loaf pan, I thought it would need less time. I'm sure that didn't help, but I'm wondering if there is a way to tweak the recipe below so that it will rise and cook properly.

I mixed the ingredients below using the muffin method, and I tried to be good about not overly mixing. EXCEPT that I realized that I had forgotten the flax eggs at the very end. I tried to add them in then so it was probably definitely over mixed.

Thanks for your help. I realize that this is full of mistakes, and hoping to learn from it for next time.

DRY
1 cup AP flour
1/4 cup quick oats
1/2 cup ground pistachios
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon cardamom
1/2 teaspoon cloves

WET
2 1/2 ripe bananas
1 cup grated carrots
1 cup pumpkin puree
2 flax eggs
1/4 cup maple syrup
1/3 cup plain yogurt
1 teaspoon vanilla extract
1 teaspoon lemon zest
