Questions for experienced bakers

New to baking and got the mainstay 3 piece springform pan (8 inch, 9 inch, and 10 inch) set at Walmart. All the pans are 2.5 inch height. The recipe I found (link attached) uses a 3.5 inch height 9 inch springform pan. The recipe does not say she uses a 3.5 inch height springform pan but someone asked her in the comment section and she replied her pan is 3.5 inches.

1st question: Will the recipe work if I split it in half and put the 2nd batch on top of the 1st batch to make a whole cake (1st batch: sponge cake and half mousse filling) (2nd batch: half of mousse filling and gelatin top)? I afraid the 1st batch will have the support of the sponge cake on the bottom but the 2nd batch, since it only mousse filling and gelatin top, it will fall apart since nothing on bottom to give it structural support.

2nd question: Also, will the 10 inch springform pan extra inch in diameter compensate for the 1 inch height difference? Very appreciated if you can give me advice since I never bake before.
