Another do-ahead question -- this one about rice noodles

If I want to make rice noodles a little ahead of time and sauce right before serving (since the noodles will absorb all the flavor if left in the sauce), how do I keep them from sticking together? Should I put some kind of oil all over them or does one leave them sitting in a bowl of water?
