pvc on a candy thermometer[Moved from Not About Food]

I recently was givin a Maverick digital oil and candy thermometer. The tip of the thermometer is covered with about an inch of PVC tubing. The tubing does not slide off. The instructions do not say whether to remove the tubing or not. I would remove it, but it seems like I will have to cut it off, and I am afraid that it is supposed to serve some purpose. I emailed the company, but they have not written back. Should I take off the PVC before using the thermometer?
