& I bought it from Vieille Europe. I think I bought the right one. First he showed me the nicely packaged Lubecker Marzipan (very small). Then he brought me to vacuum packages of blocks with the word pate d'amande on it. This was what I bought. Now the French words pate d'amande could also be the translation for marzipan.
I've called the Atwater Market boutique of Chocolat privilege and was told that they sell 52% marzipan blocks, which is the same % as the block sold at Vieille Europe. Hmm my conclusion is that they are all marzipan.
Btw, I was making Mandelhörnchen (almond crescents).
Can someone demystify this for me? Where can I get real almond paste?
