Alton Brown made pumpkin bread, but instead of a pre-cooked puree... he used shredded raw pumpkin, skin & all, just shredded in a food processor. seeded first of course, and he used a rather coarse grate at that.
added it like you would for zucchini bread. I'm going to try the recipe as soon as I get my hands on some pumpkins.
has anyone tried this method before?
