I screwed up and thawed out my pork shoulder too soon - i thought it would take a couple of days to thaw. I really want pulled pork Fri, but need to cook it before it goes bad. So far I have had it sitting in a rub for a day - I thawed it Fri.
My question: Can I smoke it tomorrow for 4 hours, then finish it in the oven on Fri? Obviously realizing that it will take much longer to get up to 195. Again my main reason is so the meat does not go bad.
