Puglia on My Mind (And Matera)

Ive been hearing y'all talk about food in Puglia for far too long now. It will most likely be 2 weeks next July (Can only be in July, with two teen girls, one wife) divided somehow between Puglia and Basilicata. There's an ongoing thread with good info but its specific to two cities, and what's in between.

Are there any food experiences... farm visits, cooking classes, restaurants etc.. that you highly recommend. Much can change in a year, but in Italy some things never change or take time.

I'm getting the impression that Ceglie Messapica is one town in particular known for food. Any others? I read about Cisternino's butchers BBQ their leftovers in the evening. Any other interesting towns or villages known for something, or detour worthy? Is it worth visiting Altamura for the bread?

I'm particular struggling with the North, especially Gargano. Curious if that is worth the long detour.
