Friday morning was my opportunity to sleep in and catch up from an early flight the day before. I wasn't very hungry the morning after our lavish dinner at Quaintrelle https://www.chowhound.com/post/quaint... so a late breakfast suited me. I lyft'd over to Proud Mary . . . and was stunned that there could be so many people milling around waiting for tables at 10am.
I put my name on the list, then took a stroll to the back to observe the kitchen pass and the colorful, tall food turned out here. The staff all seem to have Antipodean accents that adds to the atmosphere.
Seeing the serious coffee brewing operation at Proud Mary, I opted for a seat at the counter instead of waiting for a table. The Barista manning the pour over station was so welcoming and charming, plus her movement behind the counter had the grace of ballet choreography.
She pointed out the custom-built espresso machines connected across multiple individual pits sunken into the counter.
A flat white for me, figuring that if these folks could not make a proper one, I should abandon all hope. My faith was not misplaced.
Very silky microfoam on my flat white and the lusciously smooth espresso base was made with the Ghost Rider blend beans.
When I finally chose the Strawberry Ricotta Hotcake from the extensive menu, my server said I'd ordered the Signature Proud Mary Aussie breakfast combo with my flat white. Mostly I wanted the strawberry marshmallow and loved how it half melted onto the hotcake. With the dulce de leche cream quenelle and strawberry syrup, the overall balance was too candy-sweet for me and made the cut berries seem too tart. The hotcake's on the dry side and needed the moisture of the syrup, making it hard to compose a mouthful. The savory Thai basil helped. This thing's ginormous, and eating half of it weighed me down for the morning.
The crowd was even denser when I left before noon. After this heavy breakfast I walked home to see the Alberta Arts District . . . and then took a nap.
