Hoping someone can help as I have found failure over and over again in my quest! I am looking for a recipe for the quintessential NY corn muffin. This is NOT corn bread. It does not have pieces of corn in it, and it is not something you eat with chili. It's sold at coffee shops (usually) and eaten with coffee. Largish, brownish top, sweetish - does not taste like cornbread made in a pan.
I have tried "Al's New York Corn Muffins" which seems to be a popular recipe online, the Magnolia Bakery recipe (highly recommended as being quintessential NY) and countless others. They are not necessarily bad, but they are not at all what I'm looking for.
Does anyone know what I'm talking about and does anyone have a recipe??
