Whats up hounds,
I am a cook here in new York and will be doing some traveling this June 2012... I will be visiting London, Paris, Italy, and Spain, possibly Berlin.
I definetly want to take advantage of these places and soak in enough knowledge to bring back with me.
I would like to work with a butcher when I'm in either Italy or Spain. Do you guys know any regions/restaurants that are known for using a lot of meats or specialize in pâté , terrines, or salami or aging meats. Any good chefs/butchers worth working for?
