Professional Baking Pans?

I'd like to buy the same loaf and cake pans that professional bakers use. I don't want aluminum, non-stick, or anything with a coating that will degrade over time. What should I look for? Maybe something similar to carbon steel that will get better (not worse) over time? I prefer to buy online and don't want to pay Williams Sonoma prices. Any opinions or suggestions? Thanks!
